Easy Fruit Salad

Fruit salad is a side dish that instantly makes me think of summertime and barbecues. Since I hail from a state that once held the record for more Jello consumption per capita, I should probably have an old family recipe for this, but sadly I don’t.  I love fruit salad and I think it pairs great with grilled foods like hamburgers, brats and hot dogs- the perfect, cool and creamy side dish for summertime!

This recipe makes a LOT of fruit salad so it is great for potlucks and barbecues. It can easily be cut in half for a smaller gathering though. This Easy Fruit Salad recipe is really flexible and you can add lots of different types of fruit to it if you’d like. Apples, bananas, and berries are all great additions too. Love shredded coconut? You can add that in as well (my husband isn’t a fan, thus I’ve omitted it from mine). It is creamy and light, and can quickly and easily be made ahead of time, which makes it great for hurried meals or when you’re hosting guests. I’ve been known to eat this fruit salad by the cupful for days afterwards, just like dessert. Good thing my kids are too little to tell on me.

Ingredients:

2 packages vanilla instant pudding

1 (20oz) can crushed pineapple with juice

1 (20oz) can pineapple tidbits with juice

2 (8oz) cans mandarin oranges, drained

2 cups red or green grapes, halved

2 cups miniature marshmallows

1 (20oz) container Cool Whip

Directions:

  1. In a large bowl mix both packages of instant vanilla pudding, crushed pineapple and pineapple tidbits WITH juice from both cans. Stir until well combined.
  2. Stir in the mandarin oranges, grapes, marshmallows and Cool Whip until well blended.
  3. Cover and refrigerate until ready to serve.
