Croissant Breakfast Sandwiches
My husband is a big fan of these Croissant Breakfast Sandwiches! I call them Breakfast Sandwiches because this is my take on a version my MIL made one Sunday for brunch. At our house, we can happily eat them at lunch or dinner too. My MIL made them with sliced ham, but since I’m not a big fan of pork, she made mine with deli turkey. It was delicious! The majority of the ingredients can be purchased in the deli & bakery section of the grocery store. When I buy the turkey, I ask the person at the deli counter to slice it thicker than the typical sandwich slices. I like using American cheese from the deli counter also because they have white American cheese instead of the dyed orange American cheese slices. That’s got to be good for something right?
It may seem crazy to add more butter to the croissants, but they are that much better toasted! I usually cook all four sandwiches at once and refrigerate any leftovers, to be reheated later on. You could just make 1 or 2 at a time if you wanted to. My mom doesn’t like eggs sunny side-up or over-medium so I make sure hers are cooked over-hard when she’s visiting. These can also be served with scrambled eggs if that’s your jam. We make them with scrambled eggs when we’re trying to please our toddler as well. Make sure to buy large croissants. Our grocery store sells small and large croissants and I made the mistake of buying the small ones once. We were left craving more of these yummy sandwiches!
Ingredients:
4 large croissants
4 slices deli turkey or ham, thicker cut
4 slices of American cheese
4 eggs
1-2 tablespoons butter
splash of milk, if scrambling the eggs
salt & pepper, to taste
Directions:
1. Heat 1-2 tablespoons butter in a frying pan. Crack each egg into the pan individually and fry until desired consistency i.e. sunny side up, over medium, over hard.
2. While the eggs are frying, slice the croissants length wise in half. Butter the top and bottom halves and toast until golden in a skillet.
3. Once croissants are toasted, remove from skillet and place sliced turkey and American cheese on them (the croissant will be warm enough to melt the cheese. The croissants will be warm enough to warm the turkey and melt the cheese. Next, add the fried egg when they’re finished cooking. Serve immediately and enjoy!
